Ingredients

• 1 kg orange sweet potatoes (or butternut), cut into 1.5cm chunks
• 2 Tbsp olive oil (divided)
• 600 g pork fillet (available here in the online store)
• 1/4 cup barbeque sauce (Jimmy's sauce will also do) ~ optional
• 1/2 medium head red cabbage, thinly sliced
• 4 spring onions, thinly sliced
• 1 jalapeno, thinly sliced ~ optional
• 1/4 cup cider vinegar (or lemon juice)
• Salt and pepper
