Ingredients

• 2 aubergine (medium)
• 5 baby carrots
• 4 tbsp olive oil
• 1 red onion
• 3 clove garlic
• 2 tsp garam masala powder or curry powder
• 2 tsp turmeric
• 2 tsp ground coriander
• 2 tin chopped tomatoes (400g)
• 2 ½ cups coconut milk (1 cup = 250ml)
• 1 tsp salt
• 1 tsp pepper
