Rack of porc chops with apple salsa

Ingredients

• 8 rack of pork chops
• 341ml Éphémère Apple beer by Unibroue
• 1/4cup honey
• 2 tablespoons olive oil
• 2 tablespoons of herbes salées du Bas-du-Fleuve
• 1/2 cup fresh coriander, finely chopped
• Salt and ground pepper
• 2 cups cherry tomatoes ( mix colors ), cut in smalls cubes
• 3/4 cup fresh coriander, chopped
• 1/2 red onion, finely chopped
• Juice from 1/2 lime
• 1 tablespoon olive oil
• 1 Cortland apple peeled, cut in small cubes (to prepare at the end only)
