Cheesy Bacon Stuffed Mini Potatoes - Paula Deen

Ingredients

• 2 lbs 1 1/2 to 2 inches in diameter Yukon gold potatoes
• 1 8-ounce package softened cream cheese
• 1 cup Sour cream
• 1/2 cup cooked, crumbled and divided applewood smoked bacon
• 2 teaspoons roasted mashed garlic
• 1 1/2 teaspoons divided salt
• 1/2 teaspoon plus more for garnish Freshly ground black pepper
• 1/4 cup finely grated sharp cheddar cheese
• 1/4 cup finely grated monterey jack cheese
• 3 tablespoons plus more for garnish chopped green onion
