Rhubarb and Strawberry Vegan Pavlova

Ingredients

• from 1 tin chickpeas aquafaba
• 170g caster sugar
• 1/4 cream of tartar
• 2 tsp cornstarch
• 1 tsp vanilla extract
• 95g fresh rhubarb, roughly chopped
• 2 strawberries, roughly chopped
• 1-2 tbsp (according to taste) caster sugar
• 25ml water
• 1 tsp cornstarch
• 200ml whippable vegan cream
• 5-6 fresh strawberries, quartered
• a handful fresh raspberries
• a handful (5g) freeze dried strawberries, crushed
• a few leaves fresh mint
• a handful toasted almond flakes
• 2-3 (optional) twist of lemon
