These raspberry jam cookies are buttery, crumbly and very delicious. They are and have been always my favorite since I was kid.
Ingredients
- 75 g unsalted butter , cold, cut into cubes
- 150 g all purpose flour
- 3 g baking powder
- 1 pinch of salt
- 1 pinch of fleur de sel
- 40 g cane sugar, fine
- 30 g egg yolks , 2 small
- 1 vanilla bean, or 1 tsp of vanilla paste
- raspberry jam , seedless (or any jam you like)
- icing sugar (2 to 3 Tbsp)
