Ingredients

  • Small bowl
  • Whisk
  • Knife
  • Gallon size zip-lock bag
  • Grill
  • Brush
  • 1.5 - 1.75 lb package of turkey tenderloins
  • 5 tbsp fresh lime juice
  • 4 tbsp olive oil
  • 4 tbsp honey
  • 2 tbsp soy sauce
  • 2 tsp chili powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 2 garlic cloves, minced
  • 1 C chopped fresh pineapple
  • 1/2 C chopped tomatoes
  • 1/4 C diced red onion
  • 1/4 C chopped cilantro
  • 1medium or large jalapeno (depending on how much heat you want), chopped
  • 1 garlic clove, minced
  • 1 tbsp fresh lime juice
  • salt and pepper to taste
  • In a small bowl, whisk together olive oil, lime juice, honey, soy sauce, chili powder, onion powder, salt, pepper, and garlic.
  • While turkey is marinating, prepare salsa. Gently mix all ingredients together until combined. Cover and place in refrigerator to allow flavors to blend while turkey is grilling.
  • Bring grill to medium to medium-high heat. Brush grate with oil.
  • Remove turkey tenders from marinade and place on grill. Grill for 6-7 minutes per side until internal temperature reaches 165 degrees F. Halfway through cooking time, brush with remaining marinade.
  • Remove turkey from grill and allow to rest for 5 minutes before serving.
  • Serve turkey tenders by themselves or over a bed of rice. Top with a generous helping of pineapple salsa.
