Ingredients

• drizzle of olive oil
• 2 cloves of garlic
• 1 small onion
• 1-2 celery stalks
• 8 oz mushrooms
• 1 1/2 cups shredded carrot
• 1 can Native Forest® Organic Classic Coconut Milk
• 4 cups of water
• 2 cubes Edward & Sons® Not-Chick'n™ Bouillon Cubes
• 1 tsp each of thyme, oregano, rosemary & dried basil
• 1 tsp salt & 1 tsp pepper (or to taste)
• 1/4 cup cornstarch
• 16 oz gnocchi
• 2 large handfuls of spinach
