• 1/2 cup chopped carrots
• 4 cups low-sodium vegetable broth
• 1 cup water
• 1 tablespoon fresh lemon juice
• 1/2 teaspoon salt
• 1 teaspoon freshly ground black pepper
• 4 tablespoon sour cream (optional)
