• 8oz (225 g) fresh spinach leaves, cooked and drained
• Freshly grated nutmeg
• 4 large eggs
• 1 small onion, peeled and finely chopped
• 2 oz (50 g) butter
• 1 oz (25 g) plain flour
• ½ pint (275 ml) milk
• 3 oz (75 g) Cheddar cheese, grated
• 2 tablespoons cream
• salt and freshly milled pepper
