Mike Ryan's Vietnamese Crispy Chicken Salad – Sweet July

Ingredients

• 2 chicken thighs, bone removed
• 3 tbsp fish sauce
• 2 tbsp soy sauce
• 3 tbsp rice vinegar
• 2 tbsp chili oil
• 1 shallot, chopped
• 1 cup sliced cucumber
• 1/2 cup of left over white rice
• 1 tsp canola oil
• 2 tbsp crushed peanuts
• 1 tsp white sugar
• Handful of basil
• Handful of mint
• Handful of cilantro
• Salt and pepper
