Ingredients

• 1 1/2 cups fresh basil leaves, lightly packed
• 1 cup fresh coriander leaves, lightly packed
• 4 green onions, coarsely chopped
• 1/4 cup fresh mint leaves, lightly packed
• 1-2 jalapeno peppers, seeded and coarsely chopped
• 2 tbs fresh ginger, chopped
• 2 tbs flaked coconut
• 2 tbs fresh lemon juice
• 3 garlic cloves
• 1/2 tsp lemon peel, grated
• 1/2 cup peanut oil
• 2 pounds boneless salmon, or other fish fillets
• Lemon and cucumber slices, to serve
