Ingredients

• 1 tablespoon olive oil
• 1 lb (450 g) 85 percent lean ground beef
• 1/2 medium yellow onion, finely diced
• 1 teaspoon garlic powder
• 3/4 teaspoon kosher salt
• 1/2 teaspoon black pepper
• 1 tablespoon Worcestershire sauce
• 2 tablespoons ketchup
• 1 tablespoon yellow mustard
• 1/2 cup finely diced dill pickles
• 1 cup (115 g) shredded sharp cheddar cheese
• 4 slices American cheese, torn into small pieces
• 12 egg roll wrappers
• Small bowl of water, for sealing
• 3 cups vegetable oil, or enough for 1 inch in the pan
• 1/2 cup mayonnaise
• 1 tablespoon dill pickle relish
• 1 teaspoon yellow mustard
• 1 teaspoon pickle juice or white vinegar
• Pinch of black pepper
