Ingredients

• 2 cup white vinegar
• 1 pound salt
• 10 pound chitterlings (hog entrails)
• 2 hog maws
• 2 cup onions (coarsely chopped)
• 2 three inch fresh red-hot chilies (washed, stemmed and coarsely chopped)
• 1 1⁄2 cup celery (coarsely chopped)
• 1 teaspoon ground black pepper
• 1 green pepper (stemmed, seeded and coarsely chopped)
• 3 cup water
