• 1/4 cup plus 1 cup warm water
• 3 tablespoons extra-virgin olive oil
• 3 cups unbleached bread flour
• Kosher Salt
• 12 ounces taleggio cheese, coarsely grated
• 1/3 cup finely grated aged pecorino cheese
