Ingredients

• 1 tbsp olive oil
• 12 turkey sausages
• 1 small onion, sliced
• 2 garlic cloves, chopped
• 800 g tinned cannellini beans, rinsed and drained
• 400 g tinned chopped tomatoes
• 450 ml chicken stock
• 1 tsp oregano
• ½ tsp thyme
• Black pepper
• 2 large handfuls of fresh spinach, washed and patted dry
