Ingredients
- ½ cup white whole wheat flour
- ¾ cup all-purpose flour
- ½ teaspoon salt
- 1½ teaspoons sugar
- 4 oz. (1 stick) cold, unsalted butter cut into pieces
- ¼ cup ice cold water combined with 1 teaspoon cider vinegar
- 1 egg white whisked together with 1 teaspoon of water to paint the crust
- 3 cups fresh corn (I used 3 ears of corn; kernels cut from the cobs weighed 15 oz.)
- 1 tablespoon vegetable oil
- 1 tablespoon unsalted butter for sautéeing the corn
- 1 cup heavy cream
- 1 cup whole milk
- 6 tablespoons unsalted butter, melted
- ½ cup granulated sugar
- 2 tablespoons yellow cornmeal
- generous pinch of freshly grated nutmeg
- ½ cup good quality maple syrup (use Dark Amber or Grade B)
- 3 large eggs
- 1 egg yolk
