• 1 tablespoon butter at room temperature
• 1/2 pound bacon, ground pork sausage or veggie sausage
• 1/2 10- ounce package frozen spinach, thawed and well drained
• 3/4 cups Swiss or Swiss Emmentaler cheese, shredded
• 5 eggs
• 1/2 cup cream or half and half
• 1/4 teaspoon pepper
• 1/2 teaspoon nutmeg
