Cheesy Potatoes in a Foil Pouch Recipe - Recipezazz.com

Ingredients

• 6 small potatoes (small-medium red skin or yukon gold potatoes, medium diced, I leave the peels on; but, you can peel them if you want)
• 1/4 cup yellow onions, diced
• 1/2 to 1 teaspoon garlic, minced
• 1/2 cup bell peppers, diced (mixed, red, yellow, green bell; or even a little jalapeno or poblano)
• 1/3 cup celery, diced (small diced)
• 4 to 6 whole white button mushrooms (or cremini mushrooms, stems trimmed and sliced, optional)
• 1/3 to 1/2 cup grated cheese (cheddar and monterey jack are my favorite, more or less depending on how cheesy you like it)
• 1/4 to 1/2 teaspoon kosher salt
• 1/2 teaspoon pepper
• 2 teaspoons butter (1 per packet)
• 1 1/2 teaspoons oil (olive oil)
• non-stick spray (olive oil can be substituted)
