Ingredients

• 4 sweet potatoes
• 1/4 cup (55 g) butter
• 1 lb (450 g) boneless, skinless chicken breast, cubed
• 6 tbsp (90 ml) olive oil
• 2 shallots, cut into thin wedges
• 3 zucchini, cut into 1/2-inch (1 cm) rounds
• 2 green onions, chopped
• 1/4 cup (10 g) cilantro, finely chopped, plus more leaves for serving
• 2 tbsp (30 ml) lime juice
