Ingredients
- 2 cups whole buttermilk
- 2 tablespoons Worcestershire sauce
- 1 tablespoon hot sauce
- 1/4 teaspoon granulated garlic
- 1/4 teaspoon granulated onion
- 4 teaspoons kosher salt
- 1 1/2 teaspoons freshly ground black pepper
- 1 1/2 pounds catfish fillets, (cut into 2-inch pieces)
- 2 cups plain yellow cornmeal
- 1/4 teaspoon cayenne pepper
- 4 cups vegetable oil
- 2 teaspoons blended olive oil
- 3 red Fresno chiles, (stemmed and coarsely chopped)
- 1 jalapeño chile, (stemmed and coarsely chopped)
- 1/2 small yellow onion, (diced)
- 3 garlic cloves
- 1/2 cup apple cider vinegar
- 1/4 cup red wine vinegar
- 1/2 teaspoon red pepper flakes
- 1 tablespoon kosher salt
