Hayden Quinn’s Butterflied Garlic Herby Chicken with Olive Sauce | Our Cow

Ingredients

• 1 Whole Chicken, butterflied*
• 4 cloves garlic, crushed and chopped
• Bunch oregano, leaves only
• Zest and juice of 1 lemon
• 1/4 cup extra virgin olive oil
• Sea salt and pepper, to taste
• 1 cup green olives, pitted olives, crushed and coarsely chopped
• Bunch parsley, roughly chopped
• 2 tsp chilli flakes
• 1 tsp coriander seeds, lightly toasted
• 4 anchovy fillets
• 2 tbs red wine vinegar
