Ingredients

• 3-4 cloves garlic (crushed)
• 1/4 to 1/2 sweet onion
• 1 small zuccini(6")
• 1 stick celery
• 1 small carrot
• 1/2 sweet red pepper
• mushrooms(lots!)
• 1 can pastiene italian tomatoes(crush with potato masher)
• 2 Tbls olive oil(use your seasoned oil)
• fesh grated parmesian cheese to taste
• 1/2 can tomato paste
• 3-4 steamed or soaked sun dried tomatoes(chopped fine)
• 1 glug of red wine(2-3 tbls)
