Ingredients

  • 1 head escarole [Batavia], washed in several changes of water and cut across into 2-inch (5-cm) strips
  • 1 medium bunch broccoli di rape, washed, tough stems discarded, and tops and leaves cut across into 2-inch (5-cm) pieces, or
  • 1 small onion, very finely chopped
  • 2 tablespoons olive oil
  • 8 cups (2 l) Basic Chicken Stock or commercial chicken broth
  • 4 medium cloves garlic, unpeeled, tied in a cheesecloth bag
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • ½ cup (60 g) pastina
  • 4 teaspoons fresh lemon juice
  • Freshly grated Parmesan cheese, for serving
