Beet Hollandaise Eggs Benedict | Bubbies

Ingredients

• 4 slices artisan bread, brushed with olive oil and toasted
• 1 bunch asparagus (12-15 stalks) trimmed
• 4 slices prosciutto
• 4 eggs, poached
• 2 egg yolks
• 1 stick (½ cup) unsalted butter
• 1 tbsp fresh lemon juice
• 2 tbsp Bubbies Beet Horseradish
• 1 avocado, mashed with a squeeze of lemon juice, Salt and freshly ground pepper
• 1 tablespoon fresh chives chopped
