Ingredients

• 6 Chicken Thighs (or drums, or boneless chicken breasts cut into 3-4cm chunks)
• 125 grams Chorizo (smokey, mild or hot)
• 1 medium Red Onion
• 2 Red Bell Peppers
• 2 tbsp Rice Bran Oil
• 6 Garlic Cloves
• 400 grams Can of Whole Cherry Tomatoes
• 200 ml Red Wine (or red wine stock pot)
• 200 ml Chicken Stock
• 1 tbsp Tomato Puree
• 1 tbsp Smoked Paprika
• 3 Bay Leaves
• 400 grams Can of Chickpeas
• 4 tbsp Flat-Leaf Fresh Parsley
• Freshly ground black pepper
