Chicken Chorizo Feijoada - FeastiFul

Ingredients

• 4 Chicken Thighs (bone-in and skin-on)
• 4 Chicken Drumsticks
• 200 grams Chorizo
• 1 large Red Onion
• 3 Garlic Cloves (or 1 tsp of garlic puree)
• 2 tbsp Rice Bran Oil
• 400 ml Canned Black Beans (or 250g of dried)
• 400 ml Can of Whole Cherry Tomatoes (or 2 large fresh tomatoes)
• 1 Red Bell Pepper
• 1 Green Bell Pepper
• 500 ml Chicken Stock ((broth))
• 2 tbsp Tomato Puree
• 3 Bay Leaves
• 2 tsp Smoked Paprika
• 1 tsp Dried Oregano
• Salt and pepper to taste
• Chopped parsley for garnish
