Ingredients

  • 2 red onions
  • 100 gr distilled vinegar (12%)
  • 160 gr sugar
  • 300 gr water
  • 3 bay leaves
  • Put the distilled vinegar, the sugar and 1/3 of the water in a pot and heat it on the stove. When the sugar is completely dissolved, take it off the stove and leave it to cool down in the fridge.
  • Slice the red onion. If you’re short on time and want the pickling to go quicker, make the slices thin.
  • Put the sliced onions and the bay leaves in a jar.
  • Mix the remaining 2/3 of the water into the vinegar/sugar/water- solution. When the resulting mix is room temperature or cooler – pour it into the jar until the liquid covers the onion.
  • Leave the jar in the fridge for at least a couple of hours. Preferably over night. When the onion is a popping pink, it’s done.
