Ingredients

• 2 sweet potatoes (total 500g)
• 2 tbsp olive oil
• 2 red onions, peeled and cut into medium slices
• 1 tsp ground cumin
• 1 tsp ground coriander
• 1/2 tsp chilli flakes
• Juice of half a lemon
• 100g spinach
• 100g halloumi
• 4 large British Lion eggs
• 2 heaped tbsp tahini
• Pinch of salt
• 1 garlic clove, peeled and crushed
• 3 tbsp water
