Ingredients

• 1 tbsp extra-virgin olive oil
• 1 white onion (diced)
• 2 garlic cloves (minced)
• 1kg sweet potato (peeled and cut into chunks)
• 1/2 tsp ground cumin
• 1/2 tsp ground turmeric
• 1/2 tsp ground coriander
• 2 tbsp soy sauce
• 1 can of full fat coconut milk
• 600ml vegetable stock
• 1/2 tsp salt
• 120g smooth cashew butter
