Ingredients

• 900g skinless pork belly fat trimmed, cut into bite-sized chunks
• 1 tsp vegetable oil
• 1 white onion chopped
• 3 cloves garlic minced
• 8 tbsp ají panca paste
• 1 medium tomato peeled and diced
• 1 tsp ground cumin
• 70g toasted peanuts coarsely chopped
• 1 cooked beetroot peeled and chopped
• 450g small new potatoes halved
• 475ml beef stock
• white rice and salad to serve
