- 2 Tb Cilantro (Chopped)
- 3 tsp Salt (divide into 2 tsp and 1 tsp)
- 1 Tb Ground Coriander
- 1 tsp Cumin
- 1/2 tsp Black Pepper
- 8 Chicken Thighs (either bone-in or boneless)
- 3 Tb Olive Oil
