Soup – Busy in Brooklyn

Ingredients

• 3 tbsp extra virgin olive oil
• 2 leeks, white and pale green parts only, rinsed from sand and chopped
• 2 stalks celery, chopped
• 2 large carrots, chopped
• 4 cloves garlic, minced
• 1 1/2 cups split peas
• 8 cups vegetable stock
• 5 sprigs thyme
• 2 bay leaves
• 1 tbsp soy sauce
• salt and pepper, to taste
• 10oz frozen peas
