Carrot Cake with Avocado Icing

Ingredients

• 2½ cups peeled and grated carrots
• 1 Avocado From Mexico, pitted and scooped out of flesh
• ½ cup crushed pineapple, drained
• ½ cup applesauce, unsweetened
• 3 eggs
• 1 cup flaked coconut
• 2 cups sugar
• 2½ cups All-Purpose Flour
• 1 tsp baking soda
• 1 tsp baking powder
• 1 tsp salt
• 1½ tsp cinnamon
• 1 vanilla bean
• 8 ounces cream cheese, softened
• 1 Avocado From Mexico, pitted
• ¼ cup butter, softened
• 1 Tbsp lemon juice
• 2 cups powdered sugar
