Vegan Aubergine Schnitzel | My Kitchen Spices

Ingredients

• 3 tbsp Coconut flour
• 200 ml Oat milk
• 1 tsp Garlic powder
• 1 tsp Chilli powder
• 0.5 tsp Onion powder
• 1 cup Vegan breadcrumbs (more or less depending on how much you are makings)
• 1 large Aubergine (sliced lengthways 2cm thick)
• 1 handful Vegan cheese
• 1 cup Tomato Sauce (checkout our delicious recipe*)
• Pinch Salt (to season)
• 1 tbsp Olive oil
