Balsamic Cherry Tomato Caramelized Onion Conserve

Ingredients

• 2 T. olive oil
• 2 pounds sweet onions (3 large, quartered and thinly sliced)
• 2 t. kosher salt
• 1 t. sugar
• 4 cups halved cherry or grape tomatoes (measure after halving)
• 3/4 cups honey
• 1/4 cup balsamic vinegar
• 1/2 t. freshly ground black pepper
