Oats pancakes stuffed with lemon zest cream cheese & strawberry compote

Ingredients

• 1 ¼ cup mashed bananas (about 3 small bananas)
• 2 tablespoons butter, melted
• 1 tablespoon lemon juice (about 1 small lemon, juiced)
• 1 teaspoon honey or maple syrup
• 2 eggs
• 1 cup oat flour (or blended oats into flour consistency)
• ½ teaspoon baking soda
• ½ teaspoon salt
• ½ teaspoon ground cinnamon
• ¼ teaspoon ground nutmeg
• 1 cup Anchor cream cheese
• Zest of 1 lemon
• Juice of ½ lemon
• 2 tablespoons icing sugar
• 2 cups of strawberries
• Zest of half an orange (about 1 teaspoon)
• Juice of half an orange (about 3 - 4 tablespoons)
• 2 tablespoons granulated sugar
