- ½ c unsalted butter, melted and cooled slightly
- ¼ tsp Diamond Crystal kosher salt
- ¼ c heavy whipping cream
- 2 oz chopped bittersweet chocolate
- 2 c heavy whipping cream
- 1 c sweetened condensed milk
- ¼ c instant espresso granules or 3 tablespoons (21g) instant espresso powder
- 1 tbsp vanilla extract
- Generous pinch kosher salt
- 4 egg whites (about 120g)
- 1 c granulated sugar
- ⅓ c rum or brandy (optional)
