Ingredients

• 2-3 tbsp olive oil
• 2 onions
• 2 carrots
• 2 celery sticks
• 1 leek
• 1 fennel bulb
• 4 sprigs thyme
• 1 sprig rosemary
• 2 cloves of garlic, crushed
• 1 fresh bay leaf
• 1/2 tsp chili flakes
• 300g puy lentils, rinsed
• 1 litre (4 cups) vegetable stock
• salt and pepper to taste
• 150g baby spinach leaves
