Ingredients

• 1 tbsp olive oil
• 1 cup onion, diced
• 1 each garlic, clove, minced
• 1/2 lb ground chicken, lean
• 4 oz mushrooms, fresh, ready-sliced, package
• 10 oz (300 g package ) spinach, cooked, frozen, defrosted
• 1/2 tsp nutmeg
• 1/2 tsp oregano, dried
• 1/4 tsp red hot chili pepper flakes (optional)
• 4 eggs, medium
• 1/4 tsp salt
