Ingredients

• 500 g fruit cake mix
• 1 cup brown sugar (Demerara)
• 1 packet of dates
• 250 g butter
• 1 cup of water (250 ml)
• 1 teaspoon bicarbonate of soda
• ¼ cup of water (mix with bicarbonate of soda)
• 1 cup mix nuts (250 ml)
• 250 ml mixed glace cherries
• 250 ml brandy
• 1 to 2 teaspoon ginger
• 1 teaspoon mixed spice
• 2 tablespoon apricot jam
• 2 large eggs
• 2 cups cake flour
• pinch of salt
• Mikrogolf - Microwave
