Ingredients: 2 lbs. Chop Meat; 1/2 lb. Pecorino Romano Cheese Can use up to 1 lb.; 2-3 Eggs Beat before adding; if going up to 3 lbs. of meat, do 4-5 eggs; add more egg generally to allow for more cheese and breadcrumb; (Fresh) Parsley To taste; Salt To taste, usually not a lot seeing as the Pecorino Romano has a lot of salt; less Pecorino Romano, more salt; Pepper To taste, more than salt; 1/2 cup Italian bread crumbs
