• 1/2 cup coconut sugar (100 g)
• 2 eggs, whole
• 1/2 cup almond milk (118 ml)
• 1 tsp vanilla extract (4 ml)
• 2 cups organic pastry flour or unbleached white flour (240 g)
• 4 tsp baking powder (18 g)
• 1 tsp cinnamon, ground (2 g)
• 1/8 tsp nutmeg, ground (1/3 g)
• 1 1/2 cup peaches, scrubbed and chopped into medium dice (231 g)
• 1 tsp lemon juice, fresh (5 g)
