Ingredients

• 2 packages active dry yeast
• 1 Tbsp granulated sugar
• ½ cup warm water (100º to 115º, approximately)
• 2 cups, plus 2 Tbsp whole milk, divided
• ¼ cup (½ stick) unsalted butter, cut into small cubes, plus more for greasing
• 6 ½ cups all-purpose flour, divided, plus more if needed
• 2 tsp salt
• ½ cup unsalted butter, melted
• 1 large Gelson’s egg
