Spicy Potato Soup with Lemon - River Cottage

Ingredients

• 2 tablespoons olive oil
• 1 onion, roughly chopped
• 2 garlic cloves, roughly chopped
• 1 medium-hot red chilli, deseeded and sliced
• 1 teaspoon ground cumin
• 1 teaspoon ground coriander
• ½ teaspoon sweet smoked paprika
• ½ large preserved lemon
• 500g floury potatoes, such as King Edward
• About 750ml light vegetable stock
• Sea salt and freshly ground black pepper
• A little paprika, to dust
• 4 good tablespoons plain wholemilk yoghurt or vegan alternative
• Extra virgin olive oil, to trickle
