Ingredients

• 1 1/2 pounds sweet potatoes peeled and diced
• 4 carrots peeled and diced
• 6 cups vegetable broth
• 1 teaspoon dried thyme
• 2 teaspoons canola oil
• 1 cup onion finely diced
• 4 garlic cloves minced
• 2 teaspoons Maple syrup
• 2 teaspoons Honey
• 1-3 teaspoons chipotle powder to taste
• cilantro leaves stems removeed finely shredded
