Ingredients

• 1.5kg pre-soaked Gammon joint
• 1 leek, sliced in half and washed
• 1 onion, peeled and halved
• 1 carrot, peeled and halved
• Cloves, to garnish
• 2 bay leaves
• 6 whole peppercorns
• 2 tbsp orange juice
• ½ tsp allspice
• ½ tsp cinnamon
• 100ml runny honey
• 2 tbsp sherry vinegar
• 30g dark brown soft sugar
