Layered Burrito Bake Recipe – Maritime Madness

Ingredients

• 1 lb extra-lean ground beef
• 1 each red pepper, large carrot and large onion, chopped
• 2 clove garlic, minced
• 2 cans (14.5 oz. each) diced tomatoes, undrained
• 1 cup of your favourite salsa
• 1/4 cup of Simple Mexican Molé Hot Sauce
• 1 tsp ground cumin
• 1 cup frozen corn
• 6 flour tortillas (8 inch), cut in half
• 1 can refried beans
• 2 cup grated Monterey Jack + Cheddar cheese
• Toppings: sour cream, hot sauce and cilantro
