Ingredients

• 6 cups watermelon, cut into 1 inch cubes
• 1 small fennel bulb, thinly sliced
• 1/2 cup toasted pine nuts (see note)
• 1 ounce parmesan cheese, shaved thinly
• 1 large orange, juice only
• 8 fresh basil leaves, sliced thinly
• 2 tsp. Dijon mustard
• 1/2 tsp. kosher salt
