Pasta in a Creamy Mushroom Sauce with Baby Spinach

- 375 g whole wheat pasta ((I used fettuccine))
- 2 tbsp (salted) butter
- 227 g cremini mushrooms, (sliced)
- 1 Small onion, (diced)
- 5-6 Sprigs of fresh thyme
- 3 cloves garlic (crushed)
- 2 tbsp flour
- 1/2 cup white wine
- 1 1/2 cups sodium-reduced chicken stock
- 1 tbsp half & half (10%) cream
- 2 handfuls fresh baby spinach
- salt
- pepper
- 1/4 cup milk (this may be needed)
